Mom's Rice Custard

Ingredients

2 c. milk
1 c. cooked rice
2 egg yolks (reserve whites)
1/2 c. sugar
1/4 tsp. salt
1 c. raisins (optional)
2 egg whites, beaten stiff
1/2 - 1 tsp. vanilla


Heat in a double boiler:


2 c. milk


1 c. cooked rice


In a large bowl,beat until smooth:


2 egg yolks (reserve whites)


1/2 c. sugar


1/4 tsp. salt


Stir in 1 c. raisins (optional)


Slowly add the heated milk & rice


to the egg mixture. Pour back into


double boiler and cook until thick.


Fold in:


2 egg whites, beaten stiff


1/2 - 1 tsp. vanilla


Serve warm or cold.
