Mom's Sweet Rice and Corn Pudding
Why I Love This Recipe
My mom used to make this for my sisters and I when we were little whenever it was rainy or icky outside. After a generous bowl, we'd all be happy and in the mood for some fun. Hope you guys like it, it brings back pleasant memories for me.
Ingredients You'll Need
1 can coconut milk
1/2 can of water
1 cup sweet rice
1/4 cup of sugar (to begin with but you may add more to suite your taste)
1 can of corn, drained
1 tsp of vanilla extract
Mix coconut milk, water, and rice in a medium pot. Bring to a bowl over low heat, stirring occsionally. Add sugar and vanilla. Boil for 5-10 minutes more. Add corn. Add more sugar if desired. Let cool and serve. May eaten warm or cold. Refrigereate any leftovers.
