Mom's "Snowballs"

These Cookies remind me of a cookie my mother used to make at Christmas time. I don't have her recipe, but this is pretty close. I got this recipe from the McCall's cookbook but tweaked it a bit :)

INGREDIENTS

  • Cooking Time: 29
  • Preparation Time: 15
  • 3/4 C. Soft Butter
  • 1/3 C. Sugar
  • 1 t. Almond Extract
  • 1 Egg
  • 2 C. Sifted Flour
  • 1/4 t. Salt
  • 1/2 C. Almonds (chopped)
  • Powder Sugar

DIRECTIONS

Preheat oven to 350F. Lightly grease cookie sheets. In large bowl, beat butter, sugar and almond extract until light and fluffy. Gently beat in egg. Add flour, 1 cup at a time and beat. Add all other ingrediants and beat until well blended. With hands, shape into a 1" ball and place 1" apart on cookie sheet. Bake for 15 - 20 minutes, or until just delicately browned... Remove from cookie sheet and let cool. Roll in powder sugar....


Number Of Servings:Makes 2-3 doz.


Preparation Time: 15 min.

The ex-husband called these Russian Tea Cakes. They were good with a cup o joe.
