Momie/Nonnie’s Gedempte (well-cooked in Yiddish) Chicken recipe

Serves 8-10 | Prep Time | Cook Time

Ingredients

10-15 chicken breasts, thighs, drumstick mix (bone-in, skinless)—depending on how hungry your guests are

•8 yellow onions (sliced in thin rings)

•Kitchen Bouquet (enough to coat chicken)

•Paprika (enough to coat chicken)

•Salt to taste

•1 Tablespoon Olive Oil


Place chicken in a large bowl and add the Kitchen Bouquet and 1 Tablespoon Olive Oil until thoroughly coated, then add a good amount of salt and paprika to taste



•Place chicken in a covered roasting pan (make sure that all chicken is on bottom of pan—1 layer)



•Cover chicken with sliced onions



•Cover and bake at 300 degrees for 5 hours, checking every hour to baste and make sure there is enough liquid (the onions make the liquid—DO NOT add water unless it is completely dried out—then just a little)



•Onions should get brown and soft during cooking



•Remove chicken from oven and the pan



•Serve with extra juice as gravy (add water and bullion cube to roasting pan on the stove for more gravy if necessary).
