MOMMA MIA MARINARA SAUCE

Ingredients

  • 2 T olive oil
  • 10 large organic tomatoes (the riper the better)
  • 1 clove garlic
  • 2 T fresh oregano
  • 2 T fresh Italian parsley
  • 1 medium yellow onion
  • Approx 10 white mushrooms
  • Approx 10 Italian mushrooms
  • Chili flakes
  • Pepper

Directions

  • Put olive oil into extra large saucepan
  • Heat pan on medium-high heat
  • Cut tomatoes into quarters
  • Put tomatoes into pan
  • Stir continuously for 2 minutes
  • Turn down flame to medium-low
  • Mince garlic and add to the tomatoes
  • Finely chop oregano and parsley and add to the mixture
  • Dice onion and add to mixture
  • Sprinkle chili flakes and pepper to taste
  • Slice the mushrooms and add to mixture
  • Stir occasionally for about 40 minutes
  • Turn down heat to low
  • Simmer for another 30 minutes or so, stirring occasionally
  • Add to pasta and enjoy!
