Ingredients You'll Need
2 tbsp. vegetable oil
2 tbsp. all-purpose flour
chicken breast, grilled or sauteed and chopped
sausage (Zummo, or homemade), sliced
1-2 lbs. large shrimp, peeled and deveined
chicken stock or water
2 cups okra, frozen
1 bell pepper, chopped
2-3 stalks celery, chopped
2-3 bunches green onions, chopped
1 onion, chopped
1- 14.5 oz can diced tomatoes
2-3 bay leaves
salt, pepper, garlic powder, onion powder, seafood seasoning to taste
In a large skillet over high heat, add 2 tbsp oil and flour to the pan, and whisk together quickly.
Continue cooking and stirring until a "peanut butter" brown roux forms.
Saute bell pepper, onions, garlic, and celery in a little butter or oil until soft.
Add to the roux the chicken stock, sauteed mixture, okra, tomatoes, chicken, and sausage.
Add spices and season to taste.
Cook about 30 minutes and the last 5-8 minutes add the shrimp.
Serve over rice or Mommy's Potato Salad.
