Monterey Jack Chicken

Ingredients

3 boneless skinless chicken breasts
1/2 tsp. salt
1/4 tsp. pepper
1 tsp. parsley
1/2 tsp. Mrs. Dash original seasoning
3 pcs. of Monteray Jack cheese sliced
2-3 inches by 1-1/2 inches
2 eggs, beaten
1/2 c. flour
1 c. plain bread crumbs
3 Tbl. butter
3 Tbs. olive oil


Place chicken breast in between plastic wrap and


beat to 1/4 inch thin. (The thinner the easier to roll)


Mix together salt, pepper, parsley and Mrs. Dash.


Sprinkle on both sides of each chicken breast. Place a piece of cheese on breast and roll up, tucking in ends. Dip in egg then flour and then bread crumbs.


Place in refrigerator for at least 30 minutes.


Preheat oven to 375 degrees.


Melt butter and olive


oil in a large skillet. Cook chicken until golden


brown on both sides.


Place in a 9 x13 inch baking dish and cook for 20 -25 minutes until juices run clear.
