MOOSEWOOD BURRITOS

Moosewood Burritos

INGREDIENTS

  • 5 cps pinto or kidney beans (cooked)
  • 4-5 cloves of garlic
  • 4 cps chopped onion
  • 3 green peppers
  • 1 1/2 tsp cumin
  • 1/4 tsp cayenne
  • 1 TB coriander seeds
  • 1 cp corn
  • cheese - is desire
  • wheat or corn tortillas
  • some oil

DIRECTIONS

Drain beans and reserve liquid.


Saute onions and garlic until translucent.


Add peppers and spices. Cook until tender.


Cover and set aside.


Smash beans with a potato smashed or pestle. use reserved liquid to attain consistency of mashed potatoes.


Take a serving of beans, veggies, and cheese. Wrap in tortilla.


Place in an oiled pan.


Bake at 400 for 15 minutes.
