Mrs. Cook's Sweet Potato Pudding
1/2 C sugar
1 1/2 C raw, grated sweet potatoes
2 Tbs. melted butter
1/4 tsp. nutmeg, ginger, cinnamon (each)
1 C sweet milk
1/2 C canned milk or cream
Beat eggs, slightly.
Add sugar, stir in potatoes and seasonings.
Add milk and melted butter.
Pour into buttered mold.
Bake at 325 for 1 hour.
The grated rind and juice of 1/2 lemon or 1/2 cup of pineapple are nice
additions (one or the other).
