1 ½ cups chopped onion
1 ½ cups chopped celery (about 4-5 stalks)
1 ½ cups chopped carrot (about 5 medium carrots)
½ cup butter
3 tbsp gluten free all purpose flour
2 tsp red curry powder
2 tsp yellow curry powder
2 tsp chana masala
6 cups chicken broth
1 apple, cored and chopped
1 cup red lentils
1 rotisserie chicken – pulled all meat and chopped
1 pinch of dried ground thyme
Salt and pepper to taste
1 can unsweetened coconut milk (in the Asian section of grocery)
1. Saute onions, celery, carrot, and butter in a large soup pot. Add flour, curry and chana masala, and cook 5 more minutes. Add chicken broth, mix well, and bring to a boil. Simmer about 1/2 hour.
2. Add apple, lentils, chicken, salt, pepper, and thyme. Simmer 15-20 minutes, or until rice is done.
3. Stir in coconut milk before serving.

I love Indian food and wanted to try a non-traditional soup... I adapted one that I found based on suggestions found in the reviews. Enjoy! PS - you only need to use gluten free flour if that's a concern for you.
