MUM’S BLUEBERRY CAKE

Ingredients

  • ¾ C sugar
  • ¼ C melted butter
  • 1 egg
  • ½ C milk
  • Pinch of salt
  • 2 C flour
  • 3 tsp baking powder
  • 1 cup fresh wild blueberries

Directions

  • Preheat oven to 350F
  • Combine sugar & butter.
  • Add egg & milk and beat.
  • Add milk, salt, flour & baking powder, mix.
  • Stir in blueberries
  • Pour into greased 8 x 8 baking pan.
  • Bake at 350F for 25 minutes or until pick comes out dry.
  • Enjoy!

My mom made this cake every year with our first wild blueberry harvest!
