Mussels in White Wine and Garlic

Mussels in white wine and garlic are a perfect dinner for a weekend at the beach! And the best part is that they are ready in 10 minutes!

 


INGREDIENTS

  • Cooking Time: 6 minutes
  • Preparation Time: 5 minutes
  • 2 lbs mussels, scrubbed and de-bearded
  • 2 tbsp olive oil
  • 4 garlic cloves, minced
  • 1/4 cup parsley, minced
  • 1/2 tsp salt
  • 1 cup dry white wine
  • 2 1/4" slices lemon

DIRECTIONS

Discard any mussels that are open and/or broken.



Heat olive oil over medium-high heat until shimmering. Add garlic and cook, stirring constantly, until golden brown and fragrant, about 2 minutes. Add wine, lemon, salt, and parsley and bring to a boil. Add mussels and cover, cooking for 6 minutes. Using a slotted spoon, remove mussels from broth and place in a separate bowl. Discard any unopened shells. Adjust sauce for seasoning and pour over mussels. Serve immediately.
