Mustard Apricot Pork Chops
4 pork loin chops, ¾-inch thick
⅓ cup apricot preserves
2 tablespoons Dijon mustard (or 5 tablespoons honey mustard)
1. Melt preserves and mustard together in a small saucepan over medium-low heat.
2. Place chops on greased rack of broiler pan; broil 5½ inches from heat for about 5 minutes.
3. Brush chops with half of the preserve mixture; turn and broil 5 minutes. Brush same side with
remaining preserves and broil 2 more minutes.
