My Favorite Curried Chicken Salad
This chicken salad is one of my guilty pleasures:)
INGREDIENTS
- 2 1/2 lbs cooked chicken breast, cubed
- 1/2 can sliced water chestnuts, drained
- 2 pounds seedless red grapes, halved
- 2 cups sliced almond
- 3 cups mayo
- 1 tablespoon curry powder
- 2 tablespoons soy sauce
- 2 tablespoons lemon juice
DIRECTIONS
Combine all ingredients.
Chill and serve.

This is called Chicken Salad Veronique - I learned this recipe from my mother in law but instead of soy sauce, she used a few dashes of lemon juice, Louisiana Hot Sauce and some minced scallion (white part only) and thin sliced celery. Try serving on a bed of bib lettuce alongside a platter of croissants (make your own sandwich). Lovely salad for a wedding shower, tea luncheon, summer buffet - always draws praise! Chef's note: Very important to let the cooked chicken cool before adding mayonaise - add a little mayo at a time until it is adjusted to taste - same goes for the curry powder. White pepper goes better with this salad than black.
