MY FAVORITE SUMMER EGG SCRAMBLE

Ingredients

  • 1 small zucchini, chopped into 1/4 inch cubes
  • 1/2 small red pepper, chopped into 1/4 inch cubes
  • 1 tbsp butter
  • 3 eggs
  • salt
  • pepper

Directions

  • Sautee veggies over low until soft
  • scramble eggs and season according to taste
  • add eggs and cook over med-low until set
