Why I Love This Recipe

My mum isn't much of a baker. She doesn't enjoy it and she isn't particularly great at it but when she really has to come up with a cake she's got an emergency recipe that always works: Her hazelnut cake! And it is really delicious! Another plus: It's basically lactose free! So here it goes:


Ingredients You'll Need

10 eggs
300 g sugar
400 g ground hazelnuts
chocolate and almonds for the glaze and decoration


Directions

Separate egg whites from yolks


Beat the egg whites until stiff


Mix the yolks with the sugar and the nuts


Fold the egg white in the mixture


Bake at 175 °C for 40-60 minutes


Let it cool and coat it with the chocolate glaze (make sure you check to have the right one if you’re going 100% lactose free!)
