NC BBQ SAUCE
- Combine, bring to boil, simmer uncovered about an hour.
- 2 C cider vinegar
- 1 C water
- 1 minced onion
- 1 T red pepper flake
- 1 T peppercorn
- 1 tsp. celery seed
- 1 tsp salt
Mix in enough of the sauce to moisten the pork...
Serve on buns, top with a bit more sauce...
In NC, the side of choice is Cole slaw....many times served on the sandwich.
First, grill (or dry roast) your pork (shoulder/butt, etc)....when done, pull it apart with 2 forks - hence the name "pulled pork BBQ"
