Naked Chicken Burgers

Ingredients

1.5 lbs. ground chicken
1 egg
2 Tbls tomato paste
¼ cup grated red onion
¼ cup grated carrot
¼ cup grated zucchini
¼-1/2 cup whole wheat or gluten free bread crumbs
1 tsp. cumin
½ tsp. chili powder
¼ tsp. allspice
1 tsp. parsley
1 tsp. salt
½ tsp. black pepper


Combine all vegetables, seasonings, bread crumb and egg in a large bowl.


Add chicken and mix using hands or a hand mixer until well combined.


Shape into patties. Heat olive oil in a large pan over medium high heat.


Cook patties until browned on one side (about 4 minutes) flip and continue cooking until cooked through (about 4 more minutes).


Serve in lettuce wraps.
