1/2 cup butter
1/4 cup sugar
5 tablespoons cocoa powder
1 teaspoon vanilla
2 cups graham cracker crumbs
1 cup coconut
1/2 cup walnuts (optional), chopped
3/4 cup butter
3 tablespoons milk
2 tablespoons vanilla custard pudding powder
2 cups powdered sugar
Place sofened butter in a bowl. Add sugar, cocoa, vanilla and egg. Set bowl over pan of boiling water. Stir until butter has melted and mixture resembles custard. Combine crackers, coconut and nuts in large bowl. Add custard mixture to bowl. Pack evenly into 9" square pan. Chill while making icing.
Cream butter. Add milk that has been combined with custard powder then blend with powdered sugar. Spread over chocolate base and let stand 15 minutes or more to harden. Melt 4 squares of semi-sweet chocolate with one tablespoon butter and spread thinkly over custard icing. Cool.
COMMENTS: One packet of graham crackers makes 2 batches of this so I usually make two pans and keep in the freezer. If I don't have semi-sweet chocolate 1 use 4 ounces of chocolate chips.
