Serves a lot | Prep Time 15 min | Cook Time 20 min exactly

1 stick butter, softened
1 c light brown sugar (I used dark)
3 Tbs white sugar
1 large egg
2 tsp vanilla
1-3/4 c AP flour
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1-1/2 tsp instant espresso powder
1-1/2 c semi-sweet chocolate chips

1. Cream the butter and sugars using an electric mixer.

2. Beat in the egg and vanilla.

3. In a mixing bowl, combine the flour, baking soda, baking powder, and salt and beat into the butter mixture on low speed for about 15 seconds. Stir in espresso powder and chocolate chips.

4. Bake at 300 degrees for 20 minutes.

*I have found that refrigerating cookie dough overnight ALWAYS makes cookies better. So, although the recipe didn’t call for that, I did it. And it was perfect!

Please please please make these!!!
