Why I Love This Recipe


Ingredients You'll Need

1-1/4 cups (1 pkg.) low-fat graham cracker crumbs
6 tablespoons soft soy margarine
1-1/2 pounds tofu
1 cup sugar or light granulated cane juice
1 pkg. (8 oz.) soy cream cheese
1 teaspoon vanilla extract


Directions

Process graham crackers in a food processor on high speed until they are finely ground. Add butter. Pat the mixture into a thick layer in the bottom of a 9-in non-stick springform pan. Preheat oven to 350ºF. In a


blender or food processor, puree the tofu until smooth. Add sugar, soy cream cheese and vanilla, processing until smooth. Pour the tofu mixture in to prepared crust and bake for 50 minutes. Turn the oven off, leaving the cake in the oven for one hour. Remove and cool. Refrigerate the cheesecake overnight. Serve room temperature.
