New potatoes with garlic & herbs
Why I Love This Recipe
A variation on the traditional garlic & rosemary roasted potatoes. I made this as part of a meal for a very sweet young man I was trying to impress. It worked - and now he's my husband! (Will it work as well for you? There's only one way to find out...)
Ingredients You'll Need
10-15 new potatoes (small red ones work great too!), scrubbed & quartered
2 tbsp olive oil
2 tbsp minced fresh parsley
1 tbsp chopped fresh oregano (or 1 tsp dried oregano)
1/2 tsp paprika
2 small cloves garlic, peeled & minced
Ground black pepper to taste
Fresh parlsey to garnish (optional)
Pre-heat oven to 350F.
Combine oil, minced parsley, oregano, paprika, garlic & pepper in a medium-sized bowl. Add potatoes and toss until coated.
Bake 30-40 minutes in a casserole, until lightly browned. Garnish with remaining parsley & serve.
