NEXT TO THE BORDER CHICKEN

Backstory

My family loves anything with a Mexican flair. Hope you give it a try and enjoy it too. :)

Ingredients

  • 8 chicken breasts, skinless and boneless
  • 2 quarts of water
  • 2 cups cooked rice
  • 1(16oz) jar "Thick n' Chuncky" Salsa, hot or mild
  • 1(8oz) jar medium taco sauce
  • salt and pepper to taste
  • pinch of crushed red pepper (opt)

Directions

  • In a large pot, boil chicken breasts in water until tender. Remove chicken from broth and allow to cool; then cut into cubes. Return chicken back to pot of broth and add the cooked rice. Add salsa and taco sauce. Heat through and season to taste.
