No Bake Pumpkin Pie a la Mode
Why I Love This Recipe
"Dessert" and "Healthy" seem like they are very incompadable- but my belief is that they don't have to be! I like my desserts to be so guilt free that I could eat them for dinner (or breakfast) with no regrets what so ever, and to be so tasty that I actually would want to! That is what this pie is all about. This pie is free of refined sugar, oils, dairy and eggs.
Ingredients You'll Need
1.5 cups oatmeal
3 cups dates
1 can pumpkin purée
2 very ripe bananas
3-7 frozen bananas
For the crust: In a blender or food processor, combine oatmeal and 2.5 cups dates. Blend until a sticky, slightly crumbly consistency is reached. Add more oats or more dates to get desired crust consistency.
Press the mixture into a pie dish.
For pie filling: in a blender, blend pumpkin, 2 bananas, and remaining dates until smooth. Add cinnamon if desired and more dates for a sweeter filling.
Pour filling onto the crust and pop into the freezer to allow the pie to firm up.
In a blender or food processor, blend frozen bananas until creamy.. (Try to freeze your bananas when they are very ripe- this will make them the most sweet, and make sure to peel the bananas first before you freeze them! You can let them sit out or microwave them for a few seconds to help them blend a little better.) Add vanilla extract or vanilla bean and blend for a vanilla flavored ice cream. Scoop banana ice cream on to pie and enjoy!
