1 (16 oz.) pkg. Great Northern Beans (substitute white kidney or navy bean if Great Northern is not available)
3 T. EVOO
2 large onions, diced
4 - 5 beef marrow bones
1 (15oz.) can plain tomato sauce
kosher salt and fresh ground pepper
Soak beans overnight in water. When ready to use, drain and rinse.
In a large pot, heat EVOO. Add onions and saute for 10 minutes or until onions begin to brown.
Add in drained beans, marrow bones and tomato sauce. Add in 2 - 3 cans of water, or enough to cover all ingredients.
Season with lots of salt and pepper (you will be tasting it as it cooks and checking for seasoning).
Simmer with the cover on (but slide the lid over so a little steam can escape) for 5 - 6 hours. Every hour or so, stir the beans and check for seasoning. Make sure the beans are not boiling. It should be a light simmer. The longer they cook, the better they taste.
