Nopal Cactus with Fresh Tomatoes
3 pieces of nopal cactus cleaned and diced
4 cups water
1 onion chopped
4 roma tomatoes diced
1/2 red pimento pepper diced
1/2 bunch cilantro chopped
1/2 lemon juice
dash of olive oil
salt to taste
Boil nopales in water then bring to medium heat for 15 minutes.
Drain and wash nopales taking away all slime and set aside.
In oil sauté onions.
Add tomatoes and red pimento pepper and continue cooking.
Add nopales and cilantro.
Cook everything stirring occasionally for 5 to 10 minutes.
Add salt to taste.
