"A Vegan Spin off of Scallops"

Why I Love This Recipe

Sometimes I miss eating fish, so this is one easy go to recipe for the family. It something light and quick that doesn't take to many ingredients, and can also be paired with many other foods such as a pasta dish, or even served as appetizers.

Ingredients You'll Need

King Trumpet Mushrooms
Nori Strips
Fresh Garlic
Old Bay Seasonings
Vegan Butter (Earth Balance)
2 Lemon Slices
Grapeseed Oil
Olive Oil
Fish Seasoning (Paprika, Turmeric, Thyme, Parsley, Black Pepper)
Old Bay Seasoning


Cut the stem of the king oyster mushrooms into 1/2" slices (same thickness of a scallop)
In a mixing bowl add the mushrooms, 2 capful of olive oil

3-4 Pinches of all the dry seasonings (enough seasoning to cover the mushrooms)

Then take a seasoned mushroom, and individually wrap each one with the nori strips and set aside into an airtight container

Let the shrooms marinade for about 15minutes - 1hour

Once chilled, in a cast iron skillet or nonstick skillet, on medium heat up 1 capful of grapeseed oil and a spoonful of vegan butter

Once the foam subsides, add the shrooms (with the nori strips still on them) , fresh garlic, along with the slices of lemon to the skillet

Brown on one side for 4-5 minutes , add a little more old bay seasoning to the shrooms, then turn upside down and brown the other side

Remove shrooms from skillet, take the nori strips off, and set the shrooms on a glass plate to chill

Serve & Enjoy

Pairs Well With

Over top of a garlic pea puree and roasted red peppers
