2 cups of whole barley
5 cups broth
1/4 cup pine nuts
1/2 cup macadamia nuts chopped
small bunch fresh mint chopped
1/2 cup golden yellow raisins
4 TBSP apple vinegar
4 TBSP of olive oil
salt to taste
a few pieces of butter lettuce to serve
Directions
In pot bring barley to boil in broth and simmer covered for about 45-50 minutes or until tender and most of water has been absorbed.
Let stand 5 minutes
Drain if needed and let cool.
Mix all ingredients, toss and serve on a bed of butter lettuce.
