Nutty Blonde Monkey Brownies
1 1/4 cups dried banana chips
1 cup chocolate covered almonds
1 cup peanut butter chips
1/2 cup (1 stick) unsalted butter
1 cup white sugar
1/2 cup, packed, light brown sugar
3 eggs, beaten
2 teaspoons vanilla extract
1 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup milk chocolate chips
1/2 cup toffee baking chips
Pre-heat oven to 350F degrees. Spray a 9x13 inch baking pan with non-stick cooking spray, set aside. Place banana chips and chocolate covered almonds in a large zip top plastic bag. Using a mallet or heavy can, pound bag until pieces appear coarsely chopped, set aside.
Combine peanut butter chips and butter in a large sized microwave safe bowl. Microwave on high for 1 minute, stir until smooth. If necessary return to microwave for 15 second intervals until melted. Allow to cool for 5 minutes. Add sugars and mix well with a wooden spoon. Add the eggs and vanilla extract. Mix well until thoroughly combined. Add the flour, baking powder and salt. Stir to combine. Stir in banana chips and almonds until just combined.
Spread batter evenly into prepared pan. Sprinkle milk chocolate chips and toffee chips over batter. Bake for 30-35 minutes. A toothpick inserted in center should come out with moist crumbs. Remove pan to rack. Cool for 15 minutes. Cut into 18 squares. Cover tightly with plastic wrap or foil. Refrigerate until chilled.
Pairs Well With
These are essentially "blondie" brownis with add-ins that a monkey might snack on i.e., bananas, peanuts. I make them for my little redheaded "monkey".
