OATMEAL BREAD
INGREDIENTS
- 2 cups boiling water
- 1 cup rolled oats
- 1/3 cup shortening
- 1/2 cup light molasses
- 1 Tablespoon salt
DIRECTIONS
Cool to lukewarm. Add 2 cakes compressed yeast or 2 packages dry yeast (I always use dry). Mix well. Blend in 2 eggs. Add gradually 5 1/2 cups sifted flour. Mix until dough is well blended. Place dough in a greased bowl and cover. Store in refrigerator at least 2 hours or until needed. Shape dough into 2 loaves on well-floured board, or make into 2 rolls. Let rise about 2 hours. Bake in 350 degree oven for 1 hour. Makes 2 loaves about 4 1/2 X 8 1/2" pan size.
