Oatmeal Cake

Ingredients

1 1/2 cups hot water
1 cup old-fashioned rolled oats
1 1/3 cups flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
1 cup sugar
1 cup light brown sugar, firmly packed
1/2 cup vegetable shortening
2 large eggs
1 teaspoon vanilla
ICING:
1 cup flaked coconut
1 cup chopped nuts
2/3 cup brown sugar, firmly packed
6 tablespoons butter, melted
1/4 cup heavy cream
1 teaspoon vanilla


In medium bowl, combine hot water and oats; set aside to cool slightly. Grease a 13x9" baking pan. Heat oven to 350 degrees. In medium size bowl, combing flour, baking soda, cinnamon, salt and nutmeg. In large bowl, with electric mixer on medium speed, beat sugars and shortening until fluffy. Beat in eggs and vanilla until smoother. Reduce mixer speed to low. Add oats mixture and flour mixture; beat just until uniformly combined, scraping side of bowl frequently. Spoon mixture into, greased pan. Bake 45 minutes or until cake tester inserted in center comes out clean. Cool cake in pan on wire rack 5 minutes. Meanwhile, prepare icing. Heat broiler. Spread icing over top of cake in pan. Place under broiler just until bubbly and golden about 2 minutes. Watch carefully to prevent burning.
