Oatmeal Chocolate Chip Cookies

Serves about 2 dozen | Prep Time 10min | Cook Time 10-15min


1/2 cup all-purpose flour
1/2 wheat flour
1 cup whole oats
1/2 tsp. salt
1/2 tsp. baking soda
1/2 tsp. baking powder
1/2 cup butter, softened (1 stick)
1/2 cup sugar
1/2 cup dark brown sugar
1/4 cup egg substitute
1 tbsp. vanilla
2/3 cup chocolate chips (or more to taste)
*1 cup chopped walnuts or pecans, if desired

In a bowl, combine the flours, oats, salt, baking soda and powder.

In another bowl, cream the butter, sugars, egg and vanilla.

Combine the two mixtures using a wooden spoon and mix just until moistened.

Add the chocolate chips and *nuts.

Line a baking sheet with parchment paper.

Using a ice cream scooper, drop cookies onto parchment paper.

Bake at 350F for 10-15min. or until lightly browned.
