- 1 C margarine/shortening
- 1 C sugar
- 2 eggs
- 5 T raisin water
- 2 C flour
- 1 t baking soda
- 1 t salt
- 1 t cinnamon
- 1/2 t nutmeg
- 2 C rolled oats
- 1 C raisins
- 2 C water
- 1/2 C chopped nuts (optional)
- In a small saucepan, combine raisins and water. Boil, simmer 5 minutes. Let cool and set aside 5 T of the water, drain the raisins.
- In a large bowl, cream shortening and sugar. Add eggs and raisin water, mix well. Blend dry ingredients into creamed mixture. Add raisins (and nuts) and mix well.
- Drop heaping teaspoonfuls on greased cookie sheets. Bake at 350 for 10-15 minutes. Cool on racks.
NotesThis came out of one of the "Aunt Dimity" mystery novels. It comes out nice and moist and soft and makes about 4 dozen.
