Okra, Tomatoes and Onions
3 cups okra,cut into 3/4" pieces
6 large tomatoes, washed, and cut into wedges
2 onions, chopped
4 Tablespoons butter
1/2 cup sugar
salt and pepper to taste
Put all into a medium-size saucepan and bring to a boil. Reduce heat to simmer, cover, and cook for 20 to 25 minutes. Check okra, if it can be easily poked with a fork then it's done, if not, leave on for a few more minutes. Serve hot.
Pairs Well With
This is an old Southern dish. I don't know how old , but it's good or it wouldn't still be made. I've alwayts made it from garden fresh vegies. Don't think the orka in this dish is slimy, it's not, the acid in the tomatoes takes care of that.
