Old Fashioned Banana Cake
2-1/4 cups sifted flour
1-2/3 cups sugar
1-1/4 tsp. baking powder
1-1/4 tsp. baking soda
1 tsp. salt
2/3 cup evaporated milk
4 tsp. lemon juice
2/3 cup butter or margarine, softened (I prefer butter)
1-1/2 cups mashed, ripe bananas
In a large bowl, sift the first five ingredients.
Mix evaporated milk, lemon juice, butter and bananas.
Gradually add flour mixture, beating at medium speed for 2 minutes.
Add dry ingredients and beat an additional 2 minutes.
Pour into greased and floured 9 x 13 pan and bake at 350 deg. 40 minutes or until done. (Can also use two 8-inch round cake pans)
Frost with powdered sugar icing and sprinkle with chopped pecans or walnuts.
