My mom used to make this. I love it! Freezes great!


  • 4 c. beef broth
  • 1-3/4 c. peeled & diced potatoes
  • 1-1/2 c. chopped onions
  • 1 c. sliced carrots
  • 1 c. sliced celery
  • 1/2 tsp dried basil
  • 1/4 tsp salt
  • 1/2 tsp pepper
  • 1/4 tsp dried thyme
  • 2 bay leaves
  • 44-oz. canned, undrained whole tomatoes
  • 10-0z. corn partly thawed
  • 10-0z sliced partly thawed Okra


  • Combine beef broth, potatoes, onions, carrots, celery, basil, salt, pepper, thyme, and bay leaves in a large stock pot. Blend tomatoes in a blender. Add to stock pot. Bring to a boil; reduce heat & simmer. Covered for 40 mins. add corn, and Lima beans. Simmer and stir occasionally until tender. Add okra; bring to a boil,. reduce heat simmer for 5 mins. Discard bay leaves before serving.
