One Pot Chicken and Yellow Rice

Why I Love This Recipe

This is family standby recipe when we have just arrived home and want a simple easy hot dinner. Meal preparation takes 10 minutes with cook / bake time around 35 minutes. Easy one pot concoction with a side vegetable or salad is a delicious satisfying repast.


Ingredients You'll Need

Mushrooms (1/2 cup or to taste)
6 chicken thighs skins or skins removed as per taste
1/4-1/2 red or yellow onion chopped
2-3 tablespoons Olive Oil
Tablespoon minced garlic
10 oz package bag of Yellow Rice with saffron mix (2-1/2 cups water)
Approx. 1/2 cup Green peas for taste and color
Bay leaf, basil, tarragon, Everglades seasoning depending upon preferences.


Directions

After distributing olive oil and minced garlic into bottom of pot, saute or brown chicken thighs to seal outer raw surface. Pour in water as per rice package instructions and then add rice from package, stirring to chicken and rice to properly mix. Bring all to boil for a minute and then turn down heat. Add mushrooms, basil, tarragon, and any other seasoning as preferred along with peas for color/taste and then cover pot. If using dutch oven type pot, place covered pot into oven preheated to 350 degrees for approximately 30 minutes. If preparing in pot on stove top, bring heat down to simmer for 35-40 minutes. Rice should appear cooked and fluffy - ready for serving.
