One Pot Chicken and Yellow Rice
Mushrooms (1/2 cup or to taste)
6 chicken thighs skins or skins removed as per taste
1/4-1/2 red or yellow onion chopped
2-3 tablespoons Olive Oil
Tablespoon minced garlic
10 oz package bag of Yellow Rice with saffron mix (2-1/2 cups water)
Approx. 1/2 cup Green peas for taste and color
Bay leaf, basil, tarragon, Everglades seasoning depending upon preferences.
After dribbling olive oil and stirring around chopped onion and minced garlic into bottom of pot, saute or brown (pot on medium-high or as per your stove heats) chicken thighs to seal outer raw surface. Pour in water as per rice package instructions and then add rice from package. Stir water around chicken and rice to properly mix. Bring all to boil for a minute and then turn down heat. Sprinkle in mushrooms, basil, bay leaf, tarragon, and any other seasoning as preferred along with peas for color and taste and cover pot. If using dutch oven type pot, place covered pot into oven preheated to 350 degrees for approximately 30 minutes. If preparing in pot on stove top, bring heat down to simmer for 35-40 minutes.
