ONION-ASPARAGUS OMELET

Ingredients

  • 1/2 pat of butter
  • 1 slice of onion (whole or diced)
  • 7-8 asparagus spears (1" pieces)
  • 1 egg
  • 1+ T. ranch dressing
  • 1/2 tsp. milk or water

Directions

  • Put pan on stove, low heat, and melt butter.
  • Add onion and asparagus.
  • Put the lid on.
  • Whisk together egg, ranch and milk.
  • Pour gently over veggies.
  • Put the lid on.
  • Leave it alone for 6-8 minutes (for 1 egg) (3-4 eggs = 15 minutes.)

Notes

I have a tiny pan for making one poached egg.

Now, who makes one poached egg?...

It is, however, extremely useful for a one egg english omelet...it does have a lid...and I often use it. (The poaching cup is still in the never used cupboard)

You can use any small size pan as long as it has, or can be fitted with a lid. The recipe can be multiplied.
