Why I Love This Recipe

I have a tiny pan for making one poached egg.

Now, who makes one poached egg?...

It is, however, extremely useful for a one egg english omelet...it does have a lid...and I often use it. (The poaching cup is still in the never used cupboard)

You can use any small size pan as long as it has, or can be fitted with a lid. The recipe can be multiplied.


Ingredients You'll Need

1/2 pat of butter
1 slice of onion (whole or diced)
7-8 asparagus spears (1" pieces)
1 egg
1+ T. ranch dressing
1/2 tsp. milk or water


Directions

Put pan on stove, low heat, and melt butter.


Add onion and asparagus.


Put the lid on.


Whisk together egg, ranch and milk.


Pour gently over veggies.


Put the lid on.


Leave it alone for 6-8 minutes (for 1 egg) (3-4 eggs = 15 minutes.)
