Onolicious Sweet Potatoes
2 pounds sweet potatoes, baked and peeled
6 bananas, sliced
2 14-ounce cans crushed pineapple
12 ounces macadamia nuts, chopped
1½ cups brown sugar
12 Tablespoons butter
3 teaspoons rum extract
Place sweet potatoes in a baking pan; add bananas.
Combine pineapple, butter brown sugar and rum extract and pour over sweet potatoes and bananas.
Sprinkle with macadamia nuts.
Bake at 350ºF for 25 to 30 minutes or until bubbling.
