- 4 lbs very firm pears
- 4 lbs sugar
- 2 tbsp grated orange rind
- 1 cup orange juice
- 6 tbsp lemon juice
- 1/8 cup ground cinnamon
- Hot sterilized jars
- Peel pears, quarter and core. Slice very thin. Arrange pears, sugar and cinnamon in layers in a heavy kettle. Let stand overnight.
- Next day: Add orange rind and juices. Cook until pears are tender and syrup is thick.
- Pour immediately into hot sterilized jars and seal at once.
