ORANGE PEAR CONSERVE

Ingredients

  • 4 lbs very firm pears
  • 4 lbs sugar
  • 2 tbsp grated orange rind
  • 1 cup orange juice
  • 6 tbsp lemon juice
  • 1/8 cup ground cinnamon
  • Hot sterilized jars

Directions

  • Peel pears, quarter and core. Slice very thin. Arrange pears, sugar and cinnamon in layers in a heavy kettle. Let stand overnight.
  • Next day: Add orange rind and juices. Cook until pears are tender and syrup is thick.
  • Pour immediately into hot sterilized jars and seal at once.
