Orange Cheesecake Cups

I found this recipe several years ago in a magazine. It is very low in fat and calories, but the taste isn't compromised. It is really good.

INGREDIENTS

  • 12 Vanilla Wafers
  • 1 c. Fat Free Sour Cream
  • 1/2 c. Sugar
  • 2 Tbs. Flour
  • 12 oz. Soften Fat Free Cream Cheese
  • 1/2 c. Egg Substitute
  • 2 tsp. Orange Extract
  • 1 can (11 oz.)Mandarin Oranges drained
  • 2 Tbs. Orange Marmalade

DIRECTIONS

Preheat over to 350. Place 1 wafer into bottom of each foil lined muffin pan. In medium bowl: cream - cream cheese until fluffy, add sour cream, sugar, egg sub. flour and extract, beat until smooth. Spoon into foil cups 3/4 full. Bake 18 min, turn oven off and leave in oven for 2 more min, leaving the door ajar leave in oven another 15 min. Then cool completely in the muffin pan. In a small bowl, combine the mandarin oranges and marmalade. Spoon mixture on top of each cheesecake cup. Loosely cover and store in fridge. Makes 1 dozen.


You can substitue cherries if you like
