Orange Cheesecake Triangles
1 cup fine graham cracker crumbs
6 tablespoons unsalted butter, melted
Mix together and place in a lightly sprayed 9" square baking pan.
8 oz cream cheese, soft
4 oz light cream cheese, soft
1/2 cup sugar
3 teaspoons cornstarch
4 tablespoons orange juice
3/4 cup sour cream
2 large eggs
1/2 cup orange marmalade
Process the cream cheeses, cornstarch and sugar. Add the orange juice, sour cream, eggs and mix till creamy. Pour over the crust. Place the pan in a large roasting pan and add enough hot water to come 1/2 up the sides of the pan. Bake about 35-40 minutes. Chill several hours or overnight.
Place the marmalade in a small saucepan over medium heat. Stir to melt. Pour over the cheesecake and chill till the marmalade is cold. Cut the cake into squares then into triangles.
Note: I would allow the marmalade to cool slightly before you pour over the cake.
