Orange Chocolate Swirl Cheesecake Bars
9 whole chocolate graham crackers
1 tablespoon stick butter, cut up
1 egg white
1 pkg. (8 oz.) 1/3 less fat cream cheese, softened
1 cup nonfat sour cream
1/2 cup plus 2 tablespoons sugar
2 teaspoons orange peel, grated
1/4 cup orange juice
3 tablespoons unsweetened cocoa powder
Heat oven to 350ºF. Line a 9 in. square baking pan with foil, letting foil extend above pan on opposite sides, coat with cooking spray.
Crust: Process crackers in food processor till fine crumbs. Add butter and egg white; pulse till crumbs are moistened. Using the bottom of a measuring cup, press evenly over bottom of pan. Bake 10 min, cool.
Filling: Whisk cream cheese, sour cream, 1/2 cup sugar, eggs, juice and peel in a large bowl till smooth. Remove 1/4 cup. Pour remaining batter over crust. Stir cocoa, 1 tablespoon water and remaining 2 tablespoons sugar in a cup to mix. Stir into reserved 1/4 cup batter till blended. Spoon over filling then drag a toothpick through filling in a spiral motion to create a marbled effect. Bake 30 minutes. Cool on rack in refrigerator at least 3 hrs.
Holding foil by ends, lift to cutting board. Cut into 4 equal strips. Cut each strip into 6 bars.
