Orange Pecan Cookies

Serves 6 dozen | Prep Time 15 minutes + chilling | Cook Time 10 minutes per batch

Ingredients You'll Need

1 cup butter, softened
1/2 cup sugar
1/2 cup packed brown sugar
1 egg
2 tbsp orange juice
1 tbsp grated orange peel
2 1/2 cups flour
1/2 tsp baking soda
1/2 tsp salt
1/2 cup chopped pecans


Directions

In a large mixing bowl, cream the butter and both of the sugars until light and fluffy


Beat in the egg, orange juice, and peel


Combine the flour, baking soda, and salt


Gradually add to the creamed mixture


Mix well


Stir in the pecans


Shape into two 11 1/2 inch rolls


Wrap each in plastic wrap


Refrigerate for 4 hours or overnight


Unwrap the dough


Cut into 1/4 inch slices


Place 2 inches apart on lightly greased baking sheets


Bake at 400 F for 7-8 minutes or until golden brown


Remove to wire racks to cool
