Orange Pecan Muffins

Ingredients

1 c. margarine
1 c. sugar
2 eggs
1 t. baking soda
1 c. buttermilk
2 c. flour, sifted
1/2 c. chopped pecans
Glaze:
1/4 c. orange juice
1/2 c. brown sugar


Cream margarine and sugar. Add eggs and beat. Dissolve baking soda in buttermilk. Add buttermilk and flour to batter mixture. Add pecans. Fill greased muffin pans. Bake at 400º for 20 minutes. Remove from oven. Pour glaze over top. Remove immediately from pan.


Glaze: 1/4 c. orange juice mixed with 1/2 c. brown sugar.

I had these at the women's circle of the church we used to attend. I had eaten lunch before I went, not knowing the hostess had prepared lunch for us. I sat down and ate again! I was glad I did because I loved these muffins and had to get the recipe. They are now my favorite muffin.
