Orange Pineapple Salad
1 large pkg. orange flavored gelatin
1 cup drained crushed pineapple
1 cup apricot nectar
2 cups boiling water
1 cup cold water
juice drained from pineapple
2 tbsp. cornstarch
1 cup whipping cream
Prepare gelatin using 2 cups boiling water and stir. Then add water and nectar. Add pineapple when gelatin starts to set. Pour into a 9x13 inch flat dish mold and let set.
Add drained pineapple juice to cornstarch, then add enough water to make a sauce of medium consistency when cooked. Let cool thoroughly. Prepare whipped cream. Add pineapple mixture and beat until smooth. Spread over the gelatin. Serve plain or topped with grated cheese.
