Oreo Brownies

Serves 9-12 brownies | Prep Time 25 | Cook Time 35

Ingredients

1 stick (8 Tbs) Earth Balance vegan butter
1/2 cup vegan chocolate chips
1 1/2 cup all-purpose flour
2 cups of water
3/4 cup organic brown sugar, solidly packed
2 tbsp unsweetened cocoa
2 tsp vanilla extract
1 tsp of baking powder
Pinch of salt
12-15 Newman O's cookies


Preheat the oven to 350 degrees F.


Line a 9x9 pan with parchment paper overlapping the sides a little and spray with non-stick cooking spray.


Melt the Earth Balance Vegan Butter in a small sauce pan/pot over low to medium heat.


Once the butter has melted, add the chocolate chips. Stir until the chocolate sauce is smooth and shiny.


Boil the 2 cups of water in a saucepan.


In a large mixing bowl add the flour, cocoa, baking powder, brown sugar and salt. Slow pour in the simmering water and stir. Then pour in the melted chocolate and gradually add 2 tsp vanilla. Mix with an electric hand mixer until batter is smooth and uniform.


Crush 6 cookies and gently mix into the batter. Then pour the mixture into the prepared pan. Top it with about 6 more broken cookies.


Bake for 30-35 minutes. The middle should be slightly gooey, but a toothpick should come out clean.


Let the brownies cool in the pan. Once cool, Pull the brownies out using the overlapping paper and cut the brownies into squares.
