Orzo Greek Salad
2 Tbl butter
1 cup uncooked orzo pasta
14 oz chicken broth
1 Tbl olive oil
1 clove garlic minced
10 oz fresh spinach (rinsed leave on water)
6 oz pitted kalamata olives (halved)
8 oz feta cheese crumbled
1 cup fresh tomatoes (chopped) (grape tomatoes work great
Melt butter in skillet and saute orzp until lightly browned. Stir in chicken broth and bring to boil. Cover. reduce heat and simmer until tender. (about 15-20 minutes) liquid should be absorbed.
In another skillet, saute garlic in olive add spinach, olives and tomatoes and cook until wilted (2 minutes) add orzo and mix. Top with feta cheese and gently mix in.
Great hot or room temp.
I sometimes add chicken for a complete meal.
