INGREDIENTS

  • Cooking Time: 15
  • Servings: 4
  • Preparation Time: 5
  • 2 tablespoons of olive oil
  • 2 onions, finely chopped
  • 2 cloves of garlic, finely chopped
  • 1 tablespoon of dried basil
  • 1 small tin of tomato puree [70 grams]
  • 2 tins of chopped tomatoes [400 gram tins]
  • 500 ml of vegetable stock plus one extra stock cube or 500 ml water and two stock cubes
  • salt
  • fresly grated pepper

DIRECTIONS

1 Heat the oil and fry the onion and garlic for about 5 mins


2 Add basil and tomato puree and fry for another minute


3 Add the tins of chopped tomatoes with juice, stock and stockcube, bring to the boil


4 Simmer for about 10 minutes and blitz the soup with a handblender


5 Add pepper and salt to taste



Serve with bread and cheese
