As a souper I try to make my soups from scratch and take all the time necessary to do it. But sometimes I'm in need of a quick soup, without having to go out shopping. The recipe below is one I can easily make from what I always have stored in the cupboard.


  • 2 tablespoons of olive oil
  • 2 onions, finely chopped
  • 2 cloves of garlic, finely chopped
  • 1 tablespoon of dried basil
  • 1 small tin of tomato puree [70 grams]
  • 2 tins of chopped tomatoes [400 gram tins]
  • 500 ml of vegetable stock plus one extra stock cube or 500 ml water and two stock cubes
  • salt
  • fresly grated pepper


  • 1 Heat the oil and fry the onion and garlic for about 5 mins
  • 2 Add basil and tomato puree and fry for another minute
  • 3 Add the tins of chopped tomatoes with juice, stock and stockcube, bring to the boil
  • 4 Simmer for about 10 minutes and blitz the soup with a handblender
  • 5 Add pepper and salt to taste
  • Serve with bread and cheese
