18 pounds spareribs, cut into 8-rib sections
cold water
1 cup honey
1/2 cup soy sauce
2 teas;poons minced garlic
1/4 cup oil
1 teaspoon hot pepper sauce, if desired

Place ribs in a large Dutch oven or pot with cold water to cover. Bring to boil, reduce heat and simmer uncovered 30 minutes or until meat can be easily pierced. Remove ribs, drain, cool and cut into 1 or 2 rib sections. Meanwhile mix sauce ingredients in a medium saucepan. Bring to boil over medium heat, stirring occasionally. Reduce heat and simmer 10 minutes for flavors to blend. Heat over tro 400 degrees. Place ribs in several layers in a large roasting pan, spooning sauce over each layer. Pour any remaining sauce over top. Bake turning ribs and basting twice, 30 minutes or until sauce has coated ribs with a shiny glaze. Cool, then cover tight with foil. To serve, heat over to 350 degrees and add 1/2 cup water to pan; cover again and bake 30 minutes or until ribs are heated through.
